Let’s go with the simple and healthy here… fruit salad.  You want to be a little bit unhealthy?  Add a dollop of whipped cream or ice cream or mascarpone cheese creamed with a little honey and lemon zest.

Black Bean Salad with Avocado Lime Dressing

To Make

Mixed Berry Salad – Buy a pint each of blueberries, strawberries, raspberries and blackberries. Core, wash and halve the strawberries.  Wash and pat dry the other berries.  Combine in a large bowl and drizzle with about 1 tbsp of honey.  Mix gently and allow to sit for about an hour, stirring occasionally.  Spoon a layer into clear glass dessert bowls.  Top with a layer of ice cream, frozen yogurt or Greek yogurt.  Continue layering fruit and dairy topping.  At least four layers looks nice.
